This whole heart (approximately 3 lbs) is a lean, nutrient-dense organ meat with a rich, beefy flavor similar to a lean steak. Prized by adventurous cooks and health-conscious eaters. Our cattle are raised on open pastures with no hormones or antibiotics.</p><p><strong>Cooking Suggestion:</strong> Trim and slice heart into thin steaks. Marinate in olive oil, garlic, cumin, and lime juice for 2 hours. Grill or pan-sear over high heat for just 2-3 minutes per side for medium-rare. The flavor is surprisingly mild and steak-like. Also excellent diced for anticuchos (Peruvian skewers).</p>
