<p>Premium grass-fed and finished oxtail from The High Lonesome Ranch. This large package (2-3 lbs) of cross-cut oxtail pieces is perfect for making rich, gelatinous stews and braises. The collagen-rich meat creates incredibly silky sauces. Our cattle are raised on open pastures with no hormones or antibiotics.</p><p><strong>Cooking Suggestion:</strong> Season and sear oxtail pieces until deeply browned. Braise in red wine with tomatoes, onions, carrots, and bay leaves at 300°F for 4-5 hours until meat is falling off the bone. The rich, gelatinous cooking liquid makes a luxurious sauce. Serve over creamy polenta or egg noodles.</p>
